  • MARCH TO QUEBEC CITY

    It has been a long time since we had vacation over the 4th of July.  The employees at our office choose which week we take in the summer (the office is closed...all staff take vacation the same time) and usually they pick late July.  One of the gals lives on a farm so haying isn't done this early which means she doesn't really get to go away for vacation because her husband and boys will be haying.  This year one gal is sending her youngest son off to basic training so she really wanted time off this particular week to spend time with him before he leaves.  So here we are...on vacation in Maine.  We spent a few days before the 4th visiting with our youngest son on Martha's Vineyard.  He rented a house on the island with a few of his friends.  We stayed at an inn in Woods Hole and took the ferry back and forth.  We didn't want to pay to ferry the car back and forth but didn't want to leave the Porsche in a public parking lot.  We worked Wednesday morning so arrived on the island in time for a late dinner out. Ron had lobster salad roll and clam chowder of course.  The next day we took the ferry early enough to walk around shops before having a cookout with our son...4th of July cookout...burgers of course.  We are early American history buffs so we spent the weekend of the 4th around the Concord-Lexington, MA area.  On Saturday we took a 3 1/2 hour Battle Road Walk at the Minute Man National Park.  It is amazing to think we walked on the very same road as Paul Revere walked in 1775.  Yes he walked it...he was stopped by the British between Lexington and Concord and was made to walk back to Lexington on foot.  We need to read more to see what the British did with him in Lexington.  It's nice that hotels have internet now and it is so easy using google maps to find restaurants.  I was able to find a small Irish restaurant/pub wtih great food.  We ate breakfastat a place called Belly Buster!  No real syrup but their omelet was yummy and huge.  We went to church in Concord, NH on our way home Sunday morning.  Back home we did some laundry...slept in our own bed...saw a couple of patients Monday morning...now we're back in 1775.  Augusta, ME...Benedict Arnold march to Quebec City.  Oh, we ate at a small ice cream place called Tubby's on the way over...lobster salad roll again.  They make their own ice cream...I had raspberry ice cream...not frozen yogurt and definitely not low fat or no sugar.  Yesterday we visited Old Fort Western.  How did people back then survive without air-conditioning...it was high 80s.  We checked into our hotel early and turned the air on to make the room really cold!  We had planned to go for a walk on a rail walking path but it was just too hot.  Today we will head up north but will come back to this hotel each night.  We will wind slowly up secondary roads looking for markers and taking short hikes then zip back down the interstate.  We won't be taking a bateau though.

  • CHEESY CHICKEN BURRITO

    I used this ingredient list to make burritos last night.  They came out yummy and I would definitely make them again.  The big surprise for me in this recipe was the broccoli.  I almost substituted corn but I'm glad I didn't...of course my husband thought the corn would have been better.  I can see that this could be easily made with leftover ingredients as the original recipe seems to indicate. 

     

    Cheesy Chicken Burrito

    Servings: Makes 4 servings (if a serving is ONE burrito)

    Ingredients

    1 cup precooked chicken slices (started with uncooked chicken strips and stir-fried in a little EVOO then removed chicken from pan)

    1 cup cooked broccoli (started with uncooked broccoli florets and stir-fried with a little chopped onion and chopped garlic adding a little water so it didn’t stick)

    1 cup canned black beans, rinsed (added to pan once broccoli was “done”)
    1 cup cooked brown rice (used Uncle Ben’s Ready Rice and added to pan with black beans to heat through then added chicken back in pan and stirred gently until hot)

    Seasoned with Adobo and chili powder

    4 whole-wheat tortillas (heated a little in microwave to soften but they still didn’t wrap very well so I wouldn’t use this brand again for burritos)

    1 cup prepared salsa (spread “some” on top of each filled tortilla)

    1 cup shredded cheddar (quickly layered on top before wrapping into burrito so cheese will melt just a bit)

    Original preparation instructions

    Pile chicken, beans, rice and broccoli in a bowl; top with cheddar. Microwave about 3 minutes, stirring once. Divide mixture on tortillas and wrap. Top each with 1/4 cup salsa.
